摘    要:采用电感耦合等离子体发射光谱法(ICP - AES)对不同烹煮时间的鸡汤及加不同量冰乙酸烹煮的鸡汤中Ca、Mg、Fe、Cu、Zn等5种矿物质元素进行了分析研究.结果表明,不同烹煮时间的鸡汤中Ca、Mg、Fe、Cu、Zn溶出量有显著性差异(P<0.01),Ca、Fe的溶出量随着时间的增加而增加;加冰乙酸烹煮的鸡汤中Ca、...
