摘    要:为研究用改良姜黄素分光光度法测定双份饭食物中硼含量,以评估高校学生膳食硼摄入情况,用双份饭法收集10名学生3d的食物样品,记录饮水量;食物样品在用饱和Ca(OH)2调至碱性后灰化,然后在酸性条件下硼转化为硼酸,与姜黄素反应生成红色络合物,比色定量;饮用水中硼采用国标姜黄素分光光度法测定.然后计算出调查对象硼摄入量.结果...

Abstract:To study the detemination of boron in the dupllicate food portion by the modified curcumin speetrophotometry, and assess the daily intake of boron in students from a univereity in guangzhoug.Dupllicate food portions of 10 student were collected fro three days and record the intake of water. Food sample were pretreated by dry ashing after they were alkalified with saturated Ca(OH) 2, and turned intoboric acid with acidic. Boric acid reacted with curcumin to formed a red compound with colorimetric quantity. The boron of the water were determinated using chinese national standard method. The daily intake of boron were calculated. The results showed that the modified method had good linearity ( r =0. 999 3), and precision ( RSD 〈 3.32% ), the recovery range was 86. 44% ~ 96. 10%. The average daily dietary intakes of boron for the investigation object was ( 2.02 _+ 0. 29 ) rag/d, which from foodswas (1.95 +0. 28) mg/d, from water was (0.07 +0.01) mg/d. Sgnificantly differences were found between male and female ( t = 5.21, P 〈 0. 000 1 ) , and in differences individuals for female ( F = 3.52, P = 0. 048 3 ). There were no significantly differences in different individuals for male, andbetween different days. It concluded the modified curcumin spectrophotometry was accurate, repeatable and easy to operate, suitable for the determination of boron of the dupllicate food portion. The daily dietary intake of boron was in satety range which WHO recommended.
