静水压对牛奶中细菌生长繁殖的影响

摘    要: 在20~120 MPa静水压力范围内,研究了压力对鲜牛奶中细菌的生长繁殖的影响。我们发现,在室温及20 MPa静水压下受压5 min后,细菌的生理活性显著降低,其生长繁殖受到抑制,而且生理活性的降低是一种压力非在位效应。

Abstract:The effect of pressure on growth and reproductive capacity of bacteria in raw freshmilk is studied in range of hydrostatic pressure from 20 to 120 MPa. The result is following:Atroom temperature and 20 MPa the raw fresh milk was pressed for 5 minutes then it was return tonormal pressure,the physiologic activity of bacteria in the raw fresh milk have a striking reduc-tion,this effect is the pressure effect in no situ. The effect of pressure up to 120 MPa have not ob-vious difference from that of 20 MPa.
