摘    要:采用高压密封消化罐消解样品,ICP-AES分别测定常见3种食用菌(香菇,鲜蘑,金针蘑)中Ca、Mg、Zn、Sr、Se、Ge、Sn、Cd、Pb、Hg等10种微量元素的含量。该方法简单、快速、灵敏度高,准确性好。回收率在94.0%—110.0%之间,相对标准偏差小于3.55%。实验结果证明:食用菌中含有很多对人体有益的微量元素,但同时也含有少量的有害重金属,这可能与它们生长的环境受到污染有关。通过比较分析,发现菌柄中含有的重金属含量普遍高于菌盖。因此,首先应注意环境污染问题。其次,在选购食用菌时,应首选菌盖大,菌柄小的食用菌。以防止更多的有害金属在人体内沉积。

Abstract:The ten trace elements of Ca、Mg、Zn、Sr、Se、Ge、Sn、Cd、Pb、Hg in edible fungi samples were determined by ICP-AES with high pressure nitrifying pot.The method is simple and rapid with high accuracy.The recovery is in the range of 94.0%-110.0%,and relative standard deviation is less than 3.55%.The edible fungi have many beneficial trace elements,and few heavy metals,which is related to the pollution of environment.Through comparative analysis discovered some heavy metals in the root of fungi higher than the pileus of fungi.So we should fist draw our attention to the pollution of environment.Second,bigger pileus and smaller root of fungi was suitable to eat to prevent harmful metals deposition to the human body.
