摘    要:研究了复合蛋白酶对云南土著白鱼水解的工艺条件。考察了酶用量、温度、pH值、反应时间、底物浓度、复合酶比例等因素对白鱼水解的影响。确定了最佳酶解条件为:复合酶用量(木瓜蛋白酶+风味蛋白酶1∶1)16000U/g,底物浓度30%,温度55℃,pH值7.5,时间4h。在此条件下,水解度达34.12%,氮回收率90.05%。该结果为云南白鱼生产功能食品提供科学依据。

Abstract:Biological active peptides for health food from A.polylepis(Yunnan local fish)were obtained.The technology conditions of enzymatic hydrolysis of A.polylepis were carried out,including the effects of pH,hydrolyzed time,hydrolyzed temperature,dosage and varieties of proteases,concentration and varieties of substrate on degree of hydrolysis(DH),nitrogen recovery,and taste of the product.The results show that under the conditions of pH 7.5,hydrolyzed time 4h,hydrolyzed temperature 55℃,dosage of protamex(papain + flavorzyme 1∶1)16000U/g,concentration of substrate 30%,the degree of hydrolysis is amount up to 34.12%,and the recovery of nitrogen is up to 90.05%.
