Viscosity and electroviscous effect of emulsions

Abstract:From the viscosities of oil-in-water emulsions of varying particle size and concentration (prepared with the same oil and emulsifier) an apparent increase in oil concentration during flow was derived. The particle sizes were calculated from light-scattering data of these emulsions. Combination of these data makes it possible to calculate an apparent increase in particle diameter during flow in cases where interaction between oil droplets is precluded. This increase seems to be independent of particle size and is ascribed to the electric charge on the surface of the particles.
