Conventional and new methods for the determination of alcohol and extract in wine: a statistical evaluation Summary Conventional methods for the determination of alcohol and extract in wine are compared to a new technique suitable for automatic control: The quantities measured are density and index of refraction. A mathematical transformation yields alcohol and extract content.Data from more than 300 wines are subjected to four different mathematical models. The statistical evaluation demonstrates, that a pragmatic model based on multiple regression analysis attains or surpasses the reproducibility and accuracy of the conventional methods. |
