5种贝类脂肪含量及脂肪酸组成研究

摘    要: 用氯仿 甲醇法测定了广州海鲜市场上棕带仙女蛤、波纹巴非蛤、文蛤、栉孔扇贝和园华扇贝等 5种贝类的脂肪含量 ,并用GC MS法测定了它们的脂肪酸组成。 5种贝类鉴定出的脂肪酸都在 99% (质量分数 )以上。它们的脂肪含量都大于 1% (质量分数 ) ,园华扇贝的脂肪含量最高。它们的ω 3多不饱和脂肪酸与ω 6多不饱和脂肪酸含量的比值基本上都大于 2。两种扇贝的廿碳五烯酸 (EPA)和廿二碳六烯酸 (DHA)含量都比较高。分析结果表明 ,园华扇贝不仅脂肪含量高 ,而且EPA与DHA的含量也比较高 ,是EPA和DHA理想的提取原料

Abstract:The contents of fat and fatty acids in Callista erycina (Linnaeus), Paphia (Paratapes) undulata (Born), Meretrix meretrix (Linnaeus), Chlamys farreri (Jones et Preston) and Patinopecten yessoensis (Jay) were studied. Fat was extracted with Bligh & Dyer (B&D) method. The lipid classes were transesterified with potassium hydroxide in methanol. Fatty acid methyl esters (FAMEs) were assayed with GC-MS and polar capillary column (HP-INNOWax 30 m x 0.25 mm i.d. x 0.25 micron). GC injector temperature was 220 degrees C. The column temperature was programmed from 150 degrees C (1 min) to 200 degrees C at 10 degrees C/min and then from 200 degrees C to 250 degrees C at 2 degrees C/min. FAMEs were identified by MS library, and part by their standards. Total identified fatty acids were over 99% for all samples. Fat contents of them were all over 1% by wet samples. And ratios between omega-3PUFA and omega-6PUFA were above 2 by and large. Patinopecten yessoensis (Jay) contains more fat and the valuable fatty acids, EPA and DHA. It is suitable to use it as the source of EPA and DHA.
