| Abstract: | The spectroscopic determination of phenolic molecules by means of multiple-quantum (MQ) NMR is demonstrated. Several classes of molecules (simple phenols, flavonols, secoiridoids and lignans) were unambiguously characterized in one pot analysis in an extract of extra virgin olive oil (EVOO). |
