| 摘 要： | 对灰分测量结果不确定度进行了评定．采用国标方法GB／T5009．4—2003中的重量法测定面粉中灰分．通过对影响样品测试过程的不确定度分量的分析和量化，求出被测量（灰分）的标准不确定度和扩展不确定度，给出各分量对总测量不确定度的相对贡献，对测量结果进行了表述．建立了面粉中灰分测量结果不确定度的评定方法．

| Abstract: | This article evaluates the uncertainty of ash content in wheat flour, when the ash content in foods was detected by weight method based on GB/T5009.4- 2003. A new method evaluating the uncertainty of ash content in wheat flour is presented and the method is simple, rapid and precision. |
