摘    要:
比较了丁酸单双甘油酯与标品的色谱保留值和质谱图,确定了目标物。用喷雾干燥的方法,以麦芽糊精为壁材,变性淀粉为乳化增稠剂,制备大豆油粉末油脂。采用丁酸单双甘油酯、柠檬酸单甘酯和聚甘油酯为乳化剂,当其比例为3%:1.2%:0.6%时,表面油含量1.23%,包埋率97.93%。对其复原乳状
